Simple is good! This is the best pasta you can make for a quick lunch. Easy, cheap and full of flavour.

  1. Start putting a pan with water on high heat. Bring it to boil and when it’s boiling pour the salt in. Put Spaghetti in and let it cook until they are just couple of minutes before ready, in Italy we say ” al dente”.
  2. In a frying pan put the pinch of black pepper on low heat for 2 minutes, add the olive oil and let it warm up a little bit. Slice the garlic cloves in half and get rid of the “soul” which is the white-green bud inside the clove, add the cloves to the pan and let it cook just until they start browning. Now add the chilli pepper without the seeds and sliced very thin, let it fry for 3-4 minutes and add a spoon of pasta cooking water.
  3. When Spaghetti are ” al dente” transfer them to the frying pan, adding one more spoon of cooking water, finish to cook them  for 2 minutes and add a splash of olive oil at the very end.
  4. Serve immediately with a nice sprinkle of fresh parsley on top.
