It’ summery, it’s fresh and it is one of the best ways to use the stale bread!
- Start preparing bread and onion: eliminate the crust form the bread if you want (I like it with the crust), dice it and put it in a bowl with water and 1 tbsp of vinegar. Put enough water to moist the bread but not too much. Meanwhile slice the onion and put it in another bowl with the rest of the vinegar and a splash of water. Set aside and let rest for at least 30 minutes.
- Wash and peel the cucumber, wash the tomatoes and blanche the basil leaves for few seconds putting them straight in iced water. Slice everything and put in a big bowl.
- Add the bread after getting rid of the excess of water and do the same with the onion.
- Season well with olive oil, salt and pepper. Serve immediately or keep it in the fridge.
