This is the best way to start a meal, nice and warm with soft cheese and prosciutto or Italian salame. It could be also a good side for your grilled meat main. Crescentine are good in any moment of the day!
Put all the flour on a wooden board and make a hole in the centre and spread the salt on the edge of the flour circle. Mix well the yeast in the milk and sparkling water, adding also the sugar and the lard. Mix and knead the dough until it is nice and smooth. Let it prove for at least 2 hours.
With a rolling pin work on the dough in order to have rectangular shapes (5-7 cm edge), 3-4 mm thin. In a large frying pan heat the oil to high temperature and fry gently your crescentine, turning them upside down just once, until golden brown. Let them dry on a paper towel and serve them warm. If you want them not to absorb too much oil add a teaspoon of white vinegar in your dough mix!
